Newfangled Caviar

There are several things in life that I just can't seem to get enough of : manicures, dinner dates, dress shopping, Coldplay, high heels, my dog Diesel, etc. Something else that fits into this category is a dish that my Mom makes, known at our house as Newfangled Caviar. A few days ago I sent Momma a text that simply said "How about some Newfangled Caviar?" and we had it for dinner the next night. Needless to say, she really likes it too! Anyway... the name is very misleading. There are NO fish eggs (ewww) or, well, anything nasty like that. I'm guessing it came from some type of low-cal website because the recipe that she uses has all of the nutrition information included with it. (Vegetarians will be pleased to know that it also doesn't contain any meat.)

Newfangled Caviar
Serves 12
1 can red kidney beans
1 can black beans
1 can garbanzo beans
1 can corn
1 can diced tomatoes
3 ribs celery, diced (Momma leaves this out)
1 whole red onion, chooped fine
1/4 cup vegetable oil
2 whole limes, use juice only
1 teaspoon salt
2 teaspoons chili powder
1 teaspoon cumin

Rinse and drain beans, corn, and tomatoes; mix together in a large bowl. Add celery (...or don't) and onion to bean/corn mixture.
Mix the dressing ingredients together and pour over beans and veggies. Cover and chill overnight. Stir several times before serving. Serve with tortilla chips.
Only 229 calories per serving!! 9g Fiber; 11g Protein, 0mg Cholesterol; 201mg Sodium

I could eat this stuff everyday...

    Sorry... but it came from an embroidery website. It's fast and easy, so that leaves more time for crafts, but I'm glad you like it too.
